Sausage stir fried potatoes
The sausage made this year (or more precisely, last year, as it's already January now) has a slightly light taste when eaten alone, making it particularly suitable for stir frying.Step 1 . Boil a pot of hot water and put the sausages in for a little while. Firstly, heating can easily remove the dust, oil, and other sticky substances on the surface. Secondly, my sausages are relatively dry and can be moistened after boiling. It doesn't need to be cooked for too long, it can also be done without being fully cooked. I was worried about not adding enough sausages to the cured meat, but later found out that I was greedy... so I had to cut it up and put it away for later use.
Step 2 . After boiling, rinse the surface with hot water and slice it.
Step 3 . Prepare some garlic. Laba meat and sausage themselves are quite fragrant, so I usually don't add ginger. Raw meat usually contains ginger.
Step 4 . Peel the potatoes and cut them into strips. It's easier to stir fry when slicing, as it won't stick together like slicing. The seasoning and cooking should be even, depending on personal preference. If you like slicing, you can slice it, or even shred it, as long as you like.
Step 5 . Boil some water in the pot, and when the water boils, put the potato chips in and cook for about a minute. The purpose of doing this step is to cook evenly and shorten the frying time when stir frying later. You can also skip this step and cook directly later.
Step 6 . Take out the cooked potato chips and put them on a plate. Be careful not to cook for too long and cook until soft. Just change the color, after all, you still need to stir fry later.
Step 7 . I also cut some roots of lettuce. The oilseed rape roots pulled back by the old man are a bit long, and it's a pity to throw them away directly.
Step 8 . Heat the pan with oil and add garlic.
Step 9 . Then add the sausage and stir fry.
Step 10 . After stir frying the sausage, add potato chips. The fat part of the sausage has become transparent, and the edges are slightly curled, indicating that it is basically cooked.
Step 11 . Add some salt and sugar and stir fry. Stir fry the potato chips to your liking. If you prefer the soft ones, stir fry them for a longer time. For the crispy ones, stir fry them evenly until they taste better. After all, the potato chips have already been cooked once and are over 50% cooked.
Step 12 . Potato stir fry is suitable. Put down the roots of lettuce and stir fry.
Step 13 . Just flip through this thing a few times, crispy ones taste better.
Step 14 . You can add some oyster sauce before serving, or you can skip it. I added some because I think the old oyster sauce from a certain restaurant is more effective for seasoning.
