Step 1 . Wash the lotus seeds and soak them for at least four hours. (Because lotus seeds are not easy to cook until tender, they need to be soaked for more time)

Step 11 . Cook until the Congee is smooth and the lotus seeds are soft and crisp. If you like sweet, you can add some sugar. The longan meat is also sweet, which I think is just right.
