I have made sweet glutinous rice wine for several times. My family and friends like it very much. The sweet glutinous rice wine is really sweet and fragrant. The degree is about 10 degrees. Distiller's yeast is the ferment for making wine, also known as wine starter.2. The key to making fermented glutinous rice is that nothing can be stained with oil, salt or raw water.3. 500g glutinous rice with 1g-1.5g, round glutinous rice is best, which is relatively sweet. I use "Dazhu fermented glutinous rice koji".4. When mixing distiller's yeast, be sure to cool the glutinous rice to below 30 ℃.5. After mixing the wine, put the rice into a container and gently smooth it. Do not press it too tightly, otherwise it will be sour.
Step 1 . Wash glutinous rice and soak for 5 hours; Drain the water, wrap it in gauze and steam for 20 minutes until the rice has no white heart;
Step 2 . Remove, spread out, and cool to below 30 degrees Celsius; Add a small amount of cold water to scatter the rice, dissolve the yeast with half the amount of dry rice in cold water, and mix well with the rice;
Step 3 . Put it into a sealed container and keep it at around 30 degrees for fermentation. It is best to wrap it with a cotton quilt in winter, near the heating system or the cooling area of the refrigerator;
Step 4 . This is what I made in June of the summer. After leaving it for 24-48 hours, I smelled the aroma and sweetness of the wine, and a small amount of juice came out. That's it;
Step 5 . Sweet glutinous rice wine can be eaten directly.
Step 6 . I usually filter out the liquor and slowly drink it in the refrigerator.
