Roasted Duck
The delicious roast duck makes people hungry when they think of it. The self-made roast duck is also very delicious. It has a sense of achievement and is the favorite of the whole family!Step 1 . Wash the duck thoroughly, remove excess surface moisture, and place it in a larger bowl. Use salt to soak the duck throughout its body, then add Sichuan peppercorns, star anise, cinnamon, fennel, ginger, and scallions.
Step 2 . Add 2 small pieces of light soy sauce, dark soy sauce, cooking wine, rock sugar, and a little water. Mix the duck well.
Step 3 . Flip the duck over and marinate it evenly multiple times.
Step 4 . Cover with safety film and marinate overnight in the refrigerator. Flip it over halfway to make it more flavorful.
Step 5 . Take out the marinated duck and let it air dry naturally in a cool place, controlling excess moisture for about 2 hours. Pour honey, white vinegar, and a little soy sauce into a small bowl to make a sauce (the ratio of honey to white vinegar is 1:1), brush the duck body with a brush, and make sure to brush the duck evenly from all angles. Place the cleaned duck in a cool and shady place to air dry, and repeat brushing 2-3 sides.
Step 6 . Cover the baking tray with aluminum foil, cut the potatoes into large pieces and marinate them with baking wings for 10 minutes. Then place them on the bottom of the baking tray and top with ducks. Preheat the oven to 200 degrees for 40 minutes.
Step 7 . Brush the brush material carefully every 20 minutes, and dry the skin before baking. Wrap the easily burnt parts such as duck wings and duck leg bones with tin foil. (If the duck is too fat, a lot of oil will be released during the roasting process, which can be kept to make dipping sauce for roast duck, but I poured out the duck oil.)
Step 8 . Adjust the oven to 210 degrees and bake for another 15 minutes; Then tear off the aluminum foil wrapping the duck wings and legs and bake for 10 minutes. (The specific time depends on your own oven and can be adjusted at any time)
Step 9 . Delicious roasted duck is ready. The duck is crispy on the outside and tender on the inside, and the whole house is filled with the fragrance of duck, making people drool.
Step 10 . This is my second time making roast duck. I bought a stupid duck, which is relatively small in size and doesn't have a lot of meat, but the meat is very strong.
