Step 1 . Clean the fish, then cut a few knives, apply salt, ginger, pepper, cooking wine to remove the fishy smell (marinate for 20 minutes).

Step 2 . Celery only needs celery sticks (celery leaves can be fried with meat). Cut the celery sticks into small ones.

Step 4 . Cut the cowpeas into granules, and I added some pickled cabbage here (but pickled cabbage must be cut a few more knives and cut into small pieces).

Step 6 . Wash the pickled fish again, touch a little salt and fry it in the pot until both sides are golden (if you have a non stick pot, it is better to remember that the fish should not be turned over frequently and the fire should not be too high).

Step 7 . Clean the pot and put oil in it (I use the oil left by frying fish, and make sure there is no water in the pot). If you see that the pot is smoking, it is spicy (Sichuan dialect is coming out, haha). Add pepper, ginger, garlic, and stir fry it to make it smell, and then add cowpea (stir the sour taste of cowpea out)

Step 8 . Pour celery into it and stir fry it.

Step 9 . Put the fried fish on it and add more water than the fish (because I like soup, so you can add less water).

Step 10 . Sprinkle Huoxiang on it, cover the pot, wait until the water turns milky white, and then come out of the pot (taste the taste before coming out of the pot, if there is no salt, put some salt), and put some monosodium glutamate. Finally, you can get out of the pot.
