Braised saddle bridge
Braised MA'ANQIAO --- a famous dish in Jiangsu Province. The name comes from the fact that eel and pork are cooked together in the shape of saddle bridge. The dishes are red in color, rich in soup and crispy in eel section.Step 1 . Raw materials: eel section, pork with five flowers.
Step 2 . Kill eels and remove viscera. Cut the back flower knife into 6 cm long sections, boil them in boiling water for a while, and remove the skin mucus.
Step 3 . Boiled eels naturally bend, like small bridges.
Step 4 . Heat the wok and fry the garlic in hot oil until golden. Leave the bottom oil in the pot, add scallions and ginger to stir, stir the pork in a little, add cooking wine, soy sauce, sugar and a proper amount of water, cook the meat with a small fire for 5 years, and then add the eel and garlic cloves.
