My father-in-law brought some old beans from his hometown, and I thought of making steamed meat. The raw materials are common, but it is difficult to grasp several key steps. The day before yesterday, I specially called my mother to ask for specific matters.Step 1 . Wash the beans and dry them, then break them into sections by hand (be sure to dry them. I washed them one night in advance. Note: do not break them open during washing, as water has entered the beans). Wash the potatoes and cut them into large potato strips (if they are too thin, they will break when steamed)
Step 2 . 1 and a half pounds of meat, washed and sliced, slightly thicker (my mom usually uses pork belly, which is slightly fatty and particularly fragrant when steamed). I used more lean meat because I don't like fatty meat, it depends on personal preference. Pour a bag of sweet noodle sauce (180g), add salt, soy sauce, MSG, Sichuan peppercorns, scallions, ginger slices, and other seasonings, mix well and marinate. The taste can be made heavier, so you can add salt to the dishes in the future without adding it.
Step 3 . Soak the noodles in warm water until they soften. Do not soak for too long. This step is crucial. If the time is short, it is easy to become undercooked, and if it is steamed for a long time, it will become lumps.
Step 4 . 2 leftover Mantou, crushed. The purpose is to prevent steamed dishes from sticking together. If there are none, it's okay not to put them. My mom said it's best to put some, as a beginner like me.
Step 5 . Mix all the ingredients together and mix well with your hands. If there are too many things, chopsticks won't be able to accompany you (without pictures, both of my hands are filled with sweet sauce, so I can't take pictures).
Step 6 . Add flour to the mixed dishes, mix well, and make sure the noodles are evenly coated with flour (don't miss the flour, otherwise it will stick together when steamed)
Step 7 . Steam on top of the pot, bring to a boil over high heat, then steam on low heat for 25 minutes
Step 8 . The finished product is steamed, but I didn't steam it very well. After all, it was my first time and I wasn't sure if it was a bit sticky. I believe I will do better in the future. If you like to eat garlic, you can pour garlic juice on it, which is very refreshing. My husband really likes to eat it.
Step 9 . If you haven't finished eating, make sure to put it in the refrigerator. Next time, you can stir fry it with oil or sliced garlic.
