The Western Christmas turkey is just like our dumplings. It is necessary for the dinner table. Zhangxiaopang and I joined in the fun and roasted a 15 pound meat turkey to share with you.Step 1 . Prepare turkey. Generally, 12-15 lbs turkey for 10-12 people, 15-18 lb turkey for 14-16 people, 18-22 lb turkey for 20-22 people.
Step 2 . It takes 1-2 days for 8-12 lbs, 2-3 days for 12-16 lbs, 3-4 days for 16-20 lbs and 4-5 days for 20-24 lbs to thaw the turkey naturally in the refrigerator. We bought 15 lbs for 2 and a half days.
Step 3 . To prepare the materials for pickled turkey, you need to pour salt, ginger slices, brown sugar, peppercorns, vegetable broth, 1/2cup white wine and some water into the container and mix evenly
Step 4 . Wash the thawed turkey, then soak it in the pickled seasoning, cover it and put it in the refrigerator for 24 hours, and turn it over once in the middle. This step is very important to make the roast turkey more juicy.
Step 5 . On the day of preparing serve turkey, start to prepare turkey stuffing five hours in advance: 3 celery+6 white mushrooms+1 onion+turkey liver, chop it up and fry it with a small amount of butter, cool it and stir it with chopped apples+boxed turkey stuffing+raisins+1 raw egg.
Step 6 . Preheat the oven to 300 degrees F. At the same time, take the turkey out of the marinade, wash and dry the inside and outside, lay sliced lemon on the bottom of the baking pan, put the turkey in a static position, put the turkey stuffing into the inner cavity of the turkey, apply soy sauce and all-pour sauce on the surface of the turkey, and then put the two onions into four parts around the baking pan, and pour the remaining 1/2cup of white wine at the bottom of the baking pan.
Step 7 . Cover the turkey and bake it for 3 hours at 300 degrees F. (Our turkey is too big and the lid is not tight, so we wrap it around the baking pan with tinfoil to prevent the chicken from being too dry)
Step 8 . Take it out after 3 hours, and take it out for another hour. Remove the lid, adjust the temperature to 375 degrees F, once every 20 minutes, and evenly pour the chicken juice in the baking pan onto the turkey. Finally, turn off the oven fire, open the door and place it in the oven for 15-20 minutes. (The crispy skin on the turkey sticks to the lid of the baking pan, which is destroyed by us at the first time)
Step 9 . Finally, you can enjoy it with cranberry sauce.
