Step 1 . Remove the chicken rack, cut it into pieces and wash it
Step 2 . Wash chicken heart, chicken liver and chicken nuggets, cut chicken heart to remove blood, slice chicken gizzards and cut chicken liver into pieces

Step 3 . Cut the ginger into several pieces, shred the rest, shred the scallions, wash the dried peppers and shred the green peppers

Step 4 . Boiled water with ginger slices cooking wine

Step 5 . Remove chicken offal in scalded water
Step 6 . Heat the oil, add shredded spring onion, shredded ginger, dried pepper and green pepper to saute the pot
Step 7 . Add chicken offal and stir fry (it seems to be too much, sweat!)
Step 8 . Add raw soy sauce, old soy sauce and white sugar to stir fry and control the moisture as much as possible
Step 9 . Add monosodium glutamate (or not) and a proper amount of salt before leaving the pot, and start the pot
