Spicy chicken wings
This is the first meat dish I learned. Once upon a time, a friend loved making chicken wings. I had a chance to taste this dish. It was very homely, but very fragrant. Step 1 . Wash chicken wings and cut them into pieces
Step 2 . Wash all ingredients thoroughly and prepare for use. Blanch the chicken wings in boiling water and rinse off any blood foam with warm water.
Step 3 . After heating the oil, add scallions, ginger, garlic, chicken wings, Sichuan peppercorns, star anise, cinnamon, and dried chili peppers and stir fry until fragrant (about one minute)
Step 4 . Add cooking wine, dark soy sauce, light soy sauce, and white sugar in sequence, and continue stir frying (to prevent the pot from sticking, 1 tablespoon of water can be added) for 2 minutes.
Step 5 . Add water until it reaches the chicken wings, cover with a lid, bring to a boil over high heat, then simmer on low heat for 15 minutes. Add the screw green pepper and 1 teaspoon of salt, cover with a lid again, and after 15 minutes, turn to high heat to collect the sauce.
Step 6 . After collecting the juice (depending on personal taste, some people prefer dry rice, while others prefer rice soaked in more juice), serve it on a plate and you can enjoy the delicious food.
