Stewed spring bamboo shoots
A few days ago, my mother-in-law asked her relatives to bring us two large spring bamboo shoots from my hometown. After eating fresh bamboo shoots for a long time, she thought about making a delicious, greasy spring bamboo shoot for dinner. My husband and I love spicy food, so we put millet pepper. It's really delicious and spicy ~ ~1. bamboo shoots must be boiled to remove astringency;2. both soy sauce and oyster sauce have salty taste. Do not add too much salt. If the taste is not enough, add a little salt
Step 1 . Peel the spring bamboo shoots and cut off the old places of the roots (the photos without shelling were taken and then peeled off by my husband)
Step 2 . Boil the pot with water, peel the shell, slice and blanch, boil the bamboo shoots, fry again and boil for 3 minutes (the purpose of blanching is to remove the astringency of spring bamboo shoots)
Step 3 . In the process of blanching, we first prepare the streaky pork and ingredients, and cut the streaky pork into thin slices
Step 4 . Millet pepper and garlic are chopped, and I forgot to take the cut photos (my husband and I love spicy food, so we put it more. If we don't eat spicy food, we can don't put it. It's also delicious)
Step 5 . Blanch the water, scoop up the supercooled water, and then drain the water
Step 6 . Stir fry until 70% hot, add streaky pork, reduce the heat, and stir out the oil (don't burn the fire, it will dry the oil of streaky pork, and the stuffy bamboo shoots won't be so fragrant. After putting streaky pork, you can also put some peanut oil, so that the lard can come out faster)
Step 7 . When the oil is almost out, add pepper and garlic, stir up the fragrance, add dried bamboo shoots, add an appropriate amount of soy sauce, stir fry a few times, add oyster sauce, continue to stir fry for one minute, add an appropriate amount of water, and simmer for 10 minutes after boiling
Step 8 . After 10 minutes of simmering over a low fire, collect the juice over a high fire and take it out of the pot! If you like soup, you can save some for dinner (oyster sauce and soy sauce have salty taste, and you can put too much without salt. Taste it before coming out of the pot, and add some salt if it is not enough)
