Hot and sour Hami melon skin

 I bought a Hami melon a few days ago. It's sweet and very satisfied. However, I bought one some time ago. Only the center is sweet, and the thick skin root can't be eaten. What a waste. I just cut some fried food. It's still sour and spicy. It's not bad. But I really don't want to fry it again in the future. It won't taste good if it's sweet.
