Stir fried Pork with Holland Beans
A classic dish.Note that cured meat itself has a salty taste, so adding salt and soy sauce later is mainly to enhance the flavor of the Dutch beans.
Step 1 . Boil some water in the pot, and when the water boils, put the preserved meat down and cook for one or two minutes. It can remove dust and grease from the surface of cured meat without cooking it. If it is still salty, it can be cooked for a little longer. (There are three sausages in the picture, which are made for other dishes)
Step 2 . After washing the cooked cured meat with hot water, slice it into pieces. The fatty ones can be opened separately, and when stir frying, the fatty meat should be added to the pot first. Boiled cured meat is also easy to slice.
Step 3 . Remove the gluten from the Dutch beans and wash them clean.
Step 4 . Prepare some garlic.
Step 5 . Boil some more water and add some oil to it.
Step 6 . After the water boils, put the Dutch beans down and cook for about a minute. The purpose is to cook them evenly when stir frying, and there is no need to stir fry for too long. I forgot to take a picture of the boiled Dutch beans before serving them.
Step 7 . Heat the pot and add oil.
Step 8 . Add garlic and stir fry until fragrant.
Step 9 . Add the preserved meat and stir fry. Fat ones can be stir fried in the pan to remove oil, and then the less fat ones can be added.
Step 10 . After the cured meat is cooked, put down the boiled Dutch beans, add some salt and stir fry together.
Step 11 . After stir frying evenly, you can add some white sugar and light soy sauce. Just stir fry until the Dutch beans are soft and firm enough for you. Some people prefer very crispy ones, but I prefer softer ones that are more flavorful.
Step 12 . You can add some oyster sauce before serving.
