Today, I followed the food blogger Nana's video to learn how to make traditional Xinjiang pastries called baklava. I made a slight adjustment to the ratio. It takes about 4 hours, plus pre preparation and post organization, totaling nearly 5 hours.

Step 1 . Prepare all ingredients and tools.

Step 2 . Separate the egg whites and yolks of 5 eggs, and keep the other egg for brushing with egg mixture.

Step 3 . Making puff pastry: Rub 250 grams of butter into 600 grams of flour, then add 6 grams of baking powder and mix well.

Step 4 . Make puff pastry: Add egg yolk and sour cream, knead into dough. It's okay if the dough isn't smooth.

Step 5 . Making puff pastry: Divide the dough into three equal parts, knead each dough into a round shape, cover with plastic wrap, and refrigerate for 1 hour in the refrigerator.

Step 6 . Weigh out 300 grams of raisins and 250 grams of walnut kernels, chop them into small pieces (do not crush too much, retain some graininess), and mix them for later use. Additionally, select some complete walnut kernels for decoration.

Step 7 . Use an electric mixer to beat the egg whites, and add a small spoonful of lemon juice halfway through. When the egg whites start to turn white and have a lot of bubbles, add 200 grams of white sugar in portions.

Step 8 . After adding all the white sugar, continue to beat the egg whites until the texture is soft and slightly viscous.

Step 9 . Take out the refrigerated dough and roll out the puff pastry. The size should be the same as the inner circle of the baking tray.

Step 10 . Spread half of the beaten egg whites onto the rolled first puff pastry. Spread crushed raisins and walnut kernels on top.

Step 11 . Spread a layer of puff pastry and repeat the previous step. Spread the third layer of puff pastry and brush with egg mixture (previously left an egg, beaten into egg mixture).

Step 12 . Gently scratch the surface of the puff pastry and place intact and beautiful walnut kernels. Preheat the oven to 180 degrees and bake for 25 minutes.

Step 13 . Heat 100 grams of honey over low heat, add 50 grams of butter in the middle, and turn off the heat until the butter melts.

Step 14 . After coloring the pastry, take it out, cut the first layer according to the pattern, and evenly pour honey in.

Step 15 . Put the baking tray back into the oven and bake at 180 degrees for another 10 minutes.

Step 16 . After baking, take out the baking tray and cool it down. Cut the pastry completely according to the pattern.
