Step 1 . Cut the purple sweet potato in half and steam it in a pot until cooked. If the picture is not crushed enough, add sugar. The sweetness depends on personal taste.
Step 2 . Dissolve in warm water and yeast, let it stand for a few minutes. Add a little white sugar to 300g of flour, stir well, add yeast water, stir into a flocculent shape, and knead into a smooth white dough. Take about two fifths of the white dough and mix it with the purple sweet potato puree just made. As the mashed potatoes have some moisture, add some dry flour in moderation. Finally, knead both colors of dough, round them up, put them into a steamer, cover it, and let it ferment. You can heat the pot up for a few seconds, and then add some water to the pot.
Step 3 . After one hour, the fermented dough should be about 1.5-2 times its original size. Remove it and let it vent, then knead it to its original size.
Step 4 . I put some dry powder on the desktop and made it directly on the stone tabletop at home without a panel. Then, I used a soldering stick to flatten the two dough pieces separately, repeated several times, and exhausted the air. Finally, I pressed the two colored dough pieces into similar shaped dough pieces with a thickness of about 1cm. The white dough piece was placed below, slightly larger than the white dough piece, and the purple dough piece was placed on top of the white dough piece. Then, I rolled it up and pressed it tightly with a little force, but did not damage the shape. After rolling it up, the mouth was closed downwards, and then cut it into pieces with a knife, as shown in the picture.
Step 5 . Put some oil on the steaming plate, and it is better to put it on the edge to prevent the bun hair from sticking to the edge. Put in the newly cut Mantou, and pay attention to leaving a space between Mantou and Mantou.
Step 6 . Put the whole dish into the pot, add water to the pot, cover it with a lid, let it ferment for about 15 minutes, then turn on medium heat and start steaming. When the water boils and white gas appears, slightly reduce the heat.
Step 7 . The fire can be turned off in about 12 minutes. The specific time depends on the size of Mantou. After turning off the fire, you need to wait 5 minutes before opening the lid of the pot.
Step 8 . Cross section, hee hee, is it beautiful? Making this Mantou for the first time is extremely simple for other masters. For me, I have tried to make white Mantou twice before, so I dare to do it. After doing it, I feel good, like it, and taste sweet.
