Crispy Shrimp with minced pork
This method is more suitable for frozen shrimp. As for those lively shrimp, it is better to blanch them to eat their own delicious flavor.
Step 1 . Wash the shrimp, and pick out the shrimp thread on the back with a toothpick.

Step 2 . Marinate prawns with cooking wine, pepper, ginger slices and a little salt for 20 minutes to remove fishiness.

Step 3 . Cut part of the onion into sections, the rest into chopped onion and ginger into shreds.

Step 4 . Dip the salted shrimp in a layer of dry starch. (No need to hang thick paste)

Step 5 . Heat a skillet with oil until 60% hot. Fry the shrimps until 70% ripe. Remove.

Step 6 . Turn the heat to high, bring the oil to a boil, and then deep fry the shrimp until the skin becomes crisp. (Don't fry it too dry to keep the elasticity of the shrimp)

Step 7 . Leave a proper amount of oil in the pot, and stir fry chopped ginger with shallot.

Step 8 . Put the shrimp in the pot.

Step 9 . Add scallions and stir well.

Step 10 . Sprinkle some pork floss and stir well. (Pork floss has a salty taste, so this dish can be without salt.)
