
Lemon Madeleine
I didn't add vanilla extract to the lemon crumb Madeleine. I used two quantities of Yunnan small green lemons to make them yellow. Step 3 . Sift in low flour and baking powder and mix well.
Step 4 . Butter is heated in microwave oven.

Step 7 . Mix the batter well and cover it with fresh-keeping film. Put it in the refrigerator for at least 1 hour in summer, and let it stand on the table for 1-2 hours in winter. I want to make it in the morning, so I prepare the ingredients in the evening, and put it all night. In winter, the batter will not return to its flowing state by itself. Take a large basin of hot water, separate the batter from the hot water, and use manual egg gas to make it return to flowing. Be careful not to overdo it.
Step 8 . The mold is coated with butter. If it is a non stick mold, it is very easy to demould with butter. There is no need to sprinkle flour. I demould perfectly every time I do it, and I have never failed.
Step 9 . The batter can be put into the flower mounting bag or scooped with a spoon. It can be put into the mold for nine minutes, 170-190 degrees, 13-20 minutes. The time depends on the size of the mold. Take a look for yourself. If you see the belly bulging high and the edge is yellow, it proves that the coloring below is almost perfect. Turn down the temperature a little and you will be out of the oven later.
