Mapo Tofu
Step 1 . Wash the tofu and cut it into pieces.
Step 2 . Boil water in the pot, add salt and bring to a boil.
Step 3 . Add bean curd and boil for another minute or two.
Step 4 . Remove tofu and set aside. Dice shallots, ginger and garlic. Dice pork (or beef) and set aside.
Step 5 . Bring the oil in the pot to a boil.
Step 6 . Add minced meat and stir fry until slightly discolored.
Step 7 . Add the chopped green onions, ginger, garlic, pepper noodles and soy sauce. Stir fry evenly.
Step 8 . Add a spoonful of Pixian bean paste and stir fry to make red oil.
Step 9 . Put in tofu and stir fry (don't use too much force).
Step 10 . Stir fry well.
Step 11 . Add fresh water and fresh tofu.
Step 12 . Stir fry until boiling, add salt and soy sauce, stir fry evenly and simmer over medium heat for 3-5 minutes.
Step 13 . Pour the starch powder into the pan three times to thicken it.
Step 14 . Stir fry until the soup thickens and brightens.
Step 15 . Put into a large bowl, add scallions, thick pepper noodles and pepper powder.
Step 16 . Boil the oil and stir in scallions, chili noodles and pepper powder.
