Homemade rice wine rice sweet wine
My family makes rice wine many times every year. I learned from my father. Before I got married, I did it with my father. After I got married, I began to make rice wine by myself. I may have seen it n times and it was very successful every time. Sometimes my father would ask me to take it back to my husband's family. I said I would do it too, but he still insisted on taking it. This is my father's love!!There seems to be a white layer on the surface of good rice wine. That is, the reason for fermentation is normal. My family made rice wine. My father and I like vegetarian stuttering very muchThe rice should not be too soft or too hard. Put the rice at a warm temperature (rice temperature is very important, it will be hot when it is hot, and it will not ferment when it is cold). The starter must be mixed evenly
Step 1 . Prepare water and yeast
Step 2 . After the rice is cooked in a rice cooker, take it out and put it in a large bowl (the rice bowl must not be needed, take it out and wash the pot, the rice should not be too soft or too hard). Place it in a warm heat (rice temperature is important, it will be scalded when it is hot, and it will not ferment when it is cold)
Step 3 . Then divide it into two pots (if it's 1 pound of rice, there's no need to divide the pots, so it's easy to mix evenly)
Step 4 . Pinch a little yeast with your fingers and sprinkle it on the rice. Use chopsticks or a spoon to mix, sprinkle a little and mix a little (this step is quite tiring, but also requires patience)
Step 5 . When sprinkling 3-4 times, use a small spoon to scoop some water and sprinkle it on the rice (this way it will mix well)
Step 6 . When the rice in two pots is mixed evenly, pour it into a covered pot (I used the inner pot of an electric rice cooker when cooking rice), then sprinkle the final yeast evenly, ensuring that the rice is sprinkled in place and the yeast is just used up
Step 7 . After mixing the rice evenly, use a large spoon to stick some water and scrape off the rice on the edges, then flatten it (gently press)
Step 8 . Make a nest in the middle. Sprinkle some water on the surface (use a small bowl of water throughout the entire process)
Step 9 . Cover it up, wrap it in a blanket, and let it ferment in the warmest place (preferably next to the heater) for 48 hours. After that, you can check if it's good or not. There will be a lot of rice wine water in the middle, which tastes sweet. You can take it out and slowly eat it in the refrigerator. If there is no water or too little water, you can wrap it for another day, no more than 3 days at most.
Step 10 . Scoop a small bowl and pour a little plain water into it, mix it slightly, and you can eat it directly!
