Pot stickers with gourd and fresh meat
On the Mid Autumn Festival, I went to my father-in-law's and mother-in-law's house. My mother-in-law gave me a pollution-free bottle gourd. The bottle gourd has the characteristic of "sweet" and uses shrimp to enhance the freshness and taste. It is very suitable for filling into various pasta. Today I used it to make a potstickers with gourd and fresh meat. The fried potstickers have crispy skin and fragrant stuffing. Everyone says they are delicious.Step 1 . Add a little salt to the meat filling and add water to it in small amounts multiple times. (Adding salt helps with water absorption)
Step 2 . Use chopsticks to stir water into the meat filling in the same direction, and add water each time after the water is completely absorbed by the meat filling. After being cooked, the meat becomes sticky and the color becomes lighter.
Step 3 . Add soy sauce and oyster sauce, stir in one direction.
Step 4 . Grind ginger puree using a multifunctional cutting board.
Step 5 . Add thirteen spices, salt, and stir well.
Step 6 . Add sesame oil, stir well, and refrigerate for later use. (It can fully combine the moisture and seasonings in the meat filling)
Step 7 . Peel and remove the flesh from the gourd, then slice it into fine threads. Add a little salt and mix well. Marinate for 15 minutes.
Step 8 . Soak the sea rice until soft and cut it into fine pieces.
Step 9 . Squeeze out the water from the shredded gourd and cut it slightly twice.
Step 10 . Pour the dried rice, shredded gourd, and chopped scallions into the meat filling separately.
Step 11 . First, pour an appropriate amount of sesame oil onto the gourd and mix well, then mix well with other fillings.
Step 12 . Coat making: Pour flour into a bowl, add boiling water first, stir continuously until loose, then add cold water and mix evenly by hand to make a damp and sticky dough. Take out the dough, place it on the table, add a small amount of dough and gently rub it into a ball with your hands. Cover it with a damp cloth and wake up for 30 minutes.
Step 13 . Roll it into long strips, form small pieces, flatten and roll them out, take an appropriate amount of filling and place it on the dough.
Step 14 . Fold the dough in half, stick it tightly into a long strip, and then gently press the upper edge of the dough downwards. The raw material is ready
Step 15 . Mix 10 grams of flour with 200 grams of water to make flour water for later use.
Step 16 . Put a little oil in the electric cake pan and put in the Potsticker.
Step 17 . When the bottom of the pot sticker is slightly set and yellowing, pour in some flour water.
Step 18 . Cover and fry until the bottom turns golden brown and the water evaporates completely.
