1. I used the processed pigskin instead.2. The soy sauce has been cooked with spices. You can also use soy sauce directly.
Step 1 . Soak the pig skin in clean water for 2 hours, put it in a pot and cook for 30 minutes, then remove any excess hair from the pig skin. Use a knife to scrape off the oil from the meat skin. The cleaner the oil is scraped, the clearer the soup cooked. After cooling, cut into shreds. (I used processed pig skin, so these steps were omitted)
Step 2 . Spices: star anise, cloves, yam, ginger, fragrant leaves, cinnamon, etc., wrapped in gauze.
Step 3 . Put shredded pig skin into the pot, add water (just over the pig skin), add large ingredients, rice wine, ginger slices, and scallions. Boil over high heat for about 2 hours before turning to low heat.
Step 4 . After cooking, remove the ginger slices, scallions, and large buns. Pour the soup and pork skin shreds into the container.
Step 5 . After natural cooling, move to the refrigerator or a place with low temperature.
Step 6 . After solidification, remove the slices. 1/4 teaspoon of sesame oil, 1/4 teaspoon of pepper oil, 1 teaspoon of vinegar, 2 teaspoons of boiled soy sauce (soy sauce cooked with seasoning and soy sauce), 3 teaspoons of chili oil, and stir into seasoning sauce. Sprinkle with seasoning sauce and sprinkle with shredded garlic sprouts.
