I remember when I went to Kunming in 2003, I had this dish for the first time. I had eaten it in other places on the way, but I still remember the glutinous rice lotus root in Kunming, because it was made of sweet osmanthus. But I haven't done it until now.

Step 1 . Prepare materials. Peel and wash the lotus root, clean the glutinous rice thoroughly, and filter out the excess water.

Step 2 . Cut off the head of the lotus root, keep it for later use, stuff the cleaned glutinous rice into the lotus root hole, and use chopsticks to help fill it up.

Step 3 . Cover the cut lotus root head and secure it with a toothpick. Put it in a pressure cooker, add water that has just soaked the lotus root with white sugar, and cook with small red dates and white sugar for 30 minutes.

Step 4 . After the lotus root cools down, cut it into slices. Add sugar osmanthus flowers to the water used for boiling lotus roots and bring to a boil over the fire. Boil for a while and pour over the lotus root slices.
