Rock sugar honey rose sauce
Rose sauce is my favorite dessert ingredient. Besides making all kinds of cakes with it, I also like to drink it in water. Although I planted 10 roses, the flowers I collected were too limited to use. This year, during the rose blossom season, I went to the rose garden to pick and buy more than ten kilograms of roses. The sauce is enough for one year. Although it is not a small process to make more than ten kilograms of flowers into sauce, the aroma of roses in the house makes people happy when they work. This year's rose jam has changed its formula. Instead of white sugar, it uses rock sugar and honey. This sauce is more delicious and healthy. Because there is a large amount of rock candy, the old rock candy you buy is directly crushed and ground into rock candy powder by the seller, which saves a lot of energy. Otherwise, so much rock candy will damage the cooking machine.1. the dosage of the whole ingredient list is large. If a small amount of rose sauce is made, the proportion can be reduced.2. during the whole process of kneading and curing, all utensils shall be disinfected with boiling water to keep them free of oil and water.3. the rose petals to be cleaned shall be dried before cleaning. Otherwise, it is easy to break!
Step 1 . I bought a large box of roses with 12 kg petals. The petals are very light, so it's a big box. This kind of Damascus edible rose is the most suitable for making sauce.
Step 2 . The roses shall be picked and cleaned, and the water shall be dried after cleaning. The project is huge. The whole family started to pick up for several hours. Although the petals I bought are also Damascus roses, which have the same fragrance as those I planted, the color is light pink. The color I planted is darker and more beautiful. The ones on the edge of the finished product map are my own.
Step 3 . Use an oil-free and water free basin. Although the basin is not small, you can make about 300 grams of petals at a time. The petals and rock sugar are put into the rock sugar powder in a ratio of 1:1.2. Add 1g salt for every 200g of petals.
Step 4 . Rub with both hands to mix the sugar powder and petals
Step 5 . Until the sugar powder basically melts, the petals completely wither and shrink.
Step 6 . Put the kneaded petals into a container with boiled water, sterilized and oil-free. I usually choose tawny glass bottles, but this time because there are too many, not so many bottles, I used a large sealed box with two clasps. All kneaded parts shall be put into a sealed box or glass bottle. Put it in the sun for a day. Several bottles of 2kg bottles were made, and two large boxes of 3L sealed boxes were made. Enough
Step 7 . After drying, properly spread a layer of powdered sugar on the top, and then pour honey to seal it. The same is true for large boxes. But in the end, there was not enough crystal sugar. Some people used white sugar and honey for the cover
Step 8 . The honey is sealed with a lid on the back cover and stored in a dark place. Keep it for at least 2-3 months, and let it ferment slowly. The rose will be more mellow and sweet. Then you can take it out and enjoy it
