Strawberry cake roll
I haven't made cake rolls for a long time. I'm a little rusty. Today, I saw the newly purchased strawberries in the supermarket. They are very fresh. My daughter likes to eat strawberries, so she bought two boxes and made a cake roll by the way.Step 1 . Stir the oil and water (or milk) until the oil and water are mixed and emulsified.
Step 2 . Add egg yolk and mix well.
Step 3 . Sift in the flour and mix well until there is no granule. (I use ordinary medium gluten flour this time, and the finished product is as delicate as it is baked.)
Step 4 . Put the protein into a clean, water-free and oil-free container, pour white vinegar and sugar, and beat until it foams wet. (when I lift the egg beater, the egg white is a big curved hook. I put sugar at one time.)
Step 5 . Put 1/3 of the protein into the egg yolk paste and mix well.
Step 6 . Then pour back the remaining 2/3 protein and mix well.
Step 7 . Pour into the baking tray covered with oil paper and smooth it. (my baking tray is 35x27cm)
Step 8 . Put it into the preheated oven and bake at 350f/180c for 20 minutes.
Step 9 . After baking, take it out and place it upside down on the baking net. Immediately tear off the oiled paper and cover it back on the cake to prevent it from drying out. (I use the bottom as the dough, so I directly pour it onto the baking net. If I want to use cake dough as the dough, I have to pour it onto the oiled paper, tear off the oiled paper at the bottom, and then flip it over and let it cool.)
Step 10 . When baking the cake, beat the light cream with sugar until it foams hard, and put it in the refrigerator for cold storage.
Step 11 . Wash the strawberries, cut off the stems, and soak up the water with kitchen paper.
Step 12 . Spread the whipped cream on the cake slice and arrange strawberries on the side.
Step 13 . Cover the strawberries with light cream.
Step 14 . Roll it up like sushi, seal both sides, and put it in the refrigerator for half an hour to shape. (I used the greasy paper that used to bake the cake. Don't learn from me. It's better to use new greasy paper. Because the old greasy paper will soften and there are creases on the cake after rolling.)
Step 15 . After shaping, it can be sliced and eaten.
Step 16 . The cake made of ordinary flour is also very delicate.
