Dark beer is dark in color and tastes rich with a little bitter taste, but its aroma is special. Although it is good and nutritious, no one drinks it in my family. Seeing that a box of black beer was about to expire, I didn't like to use it for cooking, so it was a pity to throw it away (a box of black beer was so expensive). One day when I was making bread, I suddenly thought that I could use black beer instead of water. I immediately experimented. When my family ate, instead of tasting the taste of black beer, they said that this bread was very fragrant and tasted good. They ate several pieces of it without waiting for slicing.1. Black beer makes bread with unique flavor and mellow flavor. The dried fruit soaked in rum makes the bread taste richer.2. The baking time and temperature must be determined according to the temper of the oven. Step 1 . Prepare all the materials to be used. Rinse the dried blackcurrant with clean water slightly, and soak it in rum after draining. If there is no rum, this step can be omitted. Yeast can be high sugar tolerant (5g). It happened that when I made it, there was no yeast, and low sugar tolerant yeast was used.
Step 2 . Dissolve the yeast in 50g warm water, pour it into the bucket of the toaster, put brown sugar, vegetable oil, flour, salt, etc. in turn, and then put it again, and pour in black beer. I like to make bread with butter. Butter can be put in with all the materials, or it can be put when the dough is slightly rubbed smooth.
Step 3 . Turn on the dough mixing function of the toaster. After 30 minutes of a program, add salt when you see the dough, and the rest of the toaster will run automatically, which is less worrying than using a chef's machine. The chef's machine should be checked frequently. The effect of ordinary chef's machine is not as good as that of bread machine. I have used this toaster for several years and replaced it with a toaster barrel.
Step 4 . After 30 minutes, open the dough and see if the facial mask works well.
Step 5 . The dough surface is smooth, put it into a fresh-keeping box and send it at room temperature.
Step 6 . The room temperature is 23 ℃, and the fermentation lasts for more than an hour and a half. Take out the fermented dough and put it on the chopping board. Sprinkle flour to prevent sticking. Divide it into 5 parts on average, and then roll it round. Cover with fresh-keeping film to wake up for 20 minutes.
Step 7 . After waking up, the dough is flattened, rolled up and down, turned over, and then rolled open. The bottom edge is thin, and a layer of soaked blackcurrant is paved. The blackcurrant is dipped in dry water with kitchen paper.
Step 8 . Roll the dough from top to bottom, roll it tightly, pinch it tightly, and place it on the baking pan. Put the baking tray into the oven (without electricity), and put a bowl of hot water under it for secondary fermentation.
Step 9 . After an hour, the dough is fermented in place. Sprinkle dry powder on the surface of the dough, cut the edge, put it into the lower layer of the oven that has been preheated 180 degrees in advance, and bake it for 35 minutes. The bowl of hot water continues to be placed in the oven without taking it out. The oven I use is an embedded steaming and baking one, and the lower heating tube can't be seen from the outside, so when baking, the baking pan is placed on the lower layer. Ordinary ovens can be placed in the middle and lower layers. If the upper and lower parts can be controlled independently, the effect will be better.
Step 10 . If you see that the dough is too dark, you can cover it with a layer of tin foil, and put the bread on the grid to cool after baking.
Step 11 . When you eat it, slice it. The dried fruit soaked in rum has a unique flavor. You can change it into your favorite.
