Sauteed Sliced Lamb with Scallion
After watching several videos and making several trials, I found a homely version of fried mutton with Scallion that suits my taste. It is simple and delicious 😊~Adjust materials and methods according to personal taste!
Step 1 . Cut the mutton into thin slices along the knife (trigeminal meat and upper brain meat are the best), add a little green onion and ginger water, a proper amount of soy sauce, shredded pepper, and an egg white to stir evenly, and finally spray a little thin oil to marinate for about 10 minutes.
Step 2 . A small hob for cutting green onions.
Step 3 . Dice ginger and garlic respectively.
Step 4 . Heat up the pot, add oil and moisten the pot with high fire, pour out the oil, widen the oil again to 70-80 degrees, and put ginger seeds into the pot to explode.
Step 5 . Add mutton and stir fry quickly until color changes. Add rice vinegar along the edge of the pan and stir fry evenly.
Step 6 . Add soya bean sauce and stir fry. Add garlic after the soup.
Step 7 . When there is too much soup, you can draw the juice with a spoon.
Step 8 . Leave some broth and put the scallions in it. Add garlic again and stir fry quickly.
Step 9 . When the green onions are soft, pour 1 teaspoon of linseed oil + sesame oil (or pure sesame oil, which is the soul of this dish) along the edge of the pot, and add garlic slices (or not).
Step 10 . Stir fry quickly and evenly (full fire).
