Step 6 . Stir thoroughly by hand (operation with gloves is allowed).
Step 7 . [Fried lion's head] Heat the fat until 60% hot. Take a portion of the lion's head and beat it back and forth to form a ball. Then put it into the oil pan and fry it until the skin is golden.
Step 8 . Take out and control the oil on the oil absorbing paper for standby.
Step 9 . [Braised Marinade] Pour 500g of water into the pot and bring to a boil. Add 2 spoons of extremely delicious 20g, 1 teaspoon of salt 3g, 1 teaspoon of sugar 20g, a little cooking wine, 1-2 pieces of shallot, 2 pieces of ginger, 2 pieces of star anise. Bring to a boil again over high heat.
Step 10 . [Stewed lion's head] After the marinade is boiled, put it into the lion's head. First, turn over the lion's head with a spoon and pour the juice. Then, cover it and simmer it for about 30 minutes (the specific time depends on your own firepower and the maturity of the lion's head).
Step 11 . When the soup is thick, it will be almost ready. Use the spoon to pour brine on the lion's head again and again.
Step 12 . Take out the lion's head and put it on a plate. Open the fire in the pot to collect the soup.
Step 13 . [Finished product] Pour the thick juice on the lion's head, and the delicious braised lion's head is finished~
