Radish Cake
It is said that carrots are sweeter after frost, and I don't know if it's true or false, but I have been obsessed with it for many years. When I was a child, I loved eating radish cakes, especially fried ones. Now sometimes I still miss them, so I occasionally make arrangements.Step 1 . Wash the mushrooms thoroughly and soak them in water until soft.
Step 2 . Prepare minced meat. I cut fat and thin separately when I cut them, so the boundary is clear. Because it was prepared when I cut Wonton stuffing that day, I need to cut a bit of mud when I cut fat, so I cut them separately
Step 3 . Dice the white radish, chop the shiitake mushrooms, and prepare chopped scallions.
Step 4 . Heat the pot and add oil.
Step 5 . After turning off the heat, add minced fat and quickly stir fry with residual heat to disperse, then stir fry over low heat to remove oil.
Step 6 . After frying the fat to remove oil, turn off the heat and add minced lean meat, also using the remaining heat to stir fry and disperse.
Step 7 . Stir fry the minced meat over low heat until fragrant.
Step 8 . Add some light soy sauce and stir fry well.
Step 9 . Stir fry minced mushrooms in a wok until fragrant.
Step 10 . Pour in diced white radish.
Step 11 . Stir fry.
Step 12 . Add salt and sugar, stir fry with soy sauce until cooked. You can also add a little water and stir fry until soft.
Step 13 . Get out of the pot.
Step 14 . Pour the glutinous rice flour and sticky Rice noodles into the plate about 3:1 and add a little starch.
Step 15 . Pour in boiling water, stir with a spoon first, and add the water in several portions. Do not add too much at once.
Step 16 . Stir until there's almost no dry powder left.
Step 17 . Wear gloves and knead into dough. The perfect state of the dough is soft but not sticky. This requires more trial and practice. When it is hard, add water, and when it is soft, add flour until it is suitable. Because it is mainly glutinous rice flour, it is sticky when it is too soft, and it is not easy to wrap, but there is a critical point that it is neither sticky nor hard.
Step 18 . Mix the chopped scallions evenly into the radish filling before wrapping.
Step 19 . Grab a ball of dough and pinch it into a nest shape with both hands. After filling, use your own habitual method to close the mouth.
Step 20 . After closing the mouth, flatten it slightly and it will be wrapped up.
Step 21 . Fried or steamed is also acceptable.
Step 22 . The fried ones are quite fragrant.
Step 23 . The pan fried it beautifully.
Step 24 . Glutinous rice flour mixed with sticky Rice noodles and a little starch can make it neither sticky nor hard.
Step 25 . Steaming it is also good to eat.
