Yu-Shiang Eggplant

Main Ingredients

Long eggplant 250 g

Auxiliary Ingredients

starch 1 tablespoon
water 60ml
sugar 1 tablespoon
Vinegar 1 tablespoon
The soy sauce 3 tsp
Alcohol 1 tablespoon
hot bean paste with chilies 1 tablespoon
salad oil appropriate amount
Minced garlic 1 tablespoon
Ginger powder 1 tablespoon
Chopped scallion 1 tablespoon
mince meat 90g

Step 1 . How to do it: remove the stalks of long eggplants and cut them into 7cm long strips,

Step 2 . Heat 800ml salad oil to 180 ℃ in a pan, fry eggplant until soft, remove and drain the oil,

Step 3 . Heat up the pan, pour in 3 tablespoons of salad oil, add chopped onions, ginger, garlic and wine, and then add minced pork to stir fry.

Step 4 . Add hot bean paste and stir fry until fragrant. Add soy sauce, vinegar, sugar water and starch and boil. Add long eggplant and stir well. Scatter onion on the remaining plate~
