Step 2 . Pour white sugar and salt into a bowl of high and low flour.

Step 6 . After the dough is mixed, start to make the thousand layer pastry. First, cut 180g butter into thin and uniform pieces, put them neatly into the fresh-keeping bag, and press the butter into thin and uniform pieces with a rolling pin. (if the butter softens during the rolling process, it can be put into the refrigerator and refrigerated until it becomes hard again.)

Step 7 . Take out the loosened dough and roll it into a rectangle on the chopping board. The length is three times as long as the butter piece and the width is slightly larger than the two sides of the butter piece. Take the butter slices out of the fresh-keeping bag and put them in the center of the rolled dough slices.

Step 8 . Turn one end of the dough piece toward the center and cover it on the butter piece. The other piece also turns over to the center and covers the dough piece just covered on the butter piece. Seal the upper and lower ends, and wrap all butter slices in the dough without exposing.

Step 9 . Rotate the dough piece 90 degrees, roll it into a rectangle again with a rolling pin, and then fold the dough pieces on both sides toward the center. Then fold it in half. Put it in the refrigerator for 30 minutes, repeat this step three times, and finally roll the dough into a 1.3cm thick rectangle. The thousand layer pastry is ready.

Step 10 . Cut off the irregular edges, make them into a rectangle, brush a layer of water on the dough, wait for a while to produce stickiness, and sprinkle white sugar.

Step 11 . Roll up along the longer end and roll up from both sides to the middle.
