The annual Christmas is coming. Every time when the holiday comes, we will cook some delicious food to make the children happy. This year is no exception. Before Christmas, we will bake a garland bread in advance to warm up. When the holiday comes, we will prepare more delicious food for him to share with our good friends.Reference portion: 3Reference temperature: 180 degreesBaking time: 18 minutes1. The amount of milk and water should be adjusted properly according to the water absorption of flour;2. The fermentation time is adjusted according to the temperature change. The temperature in Beijing is low recently, and the fermentation time at normal temperature is long. If you want to quickly ferment, you can use the fermentation function of the oven to complete;3. The dough needs to be fully relaxed after the exhaust, so that it will not shrink when rubbed;4. The braiding process should not be too tight, and space should be reserved for fermentation;5. The baking time and temperature shall be adjusted according to the actual situation of the oven at home;6. During the operation, the dough should be covered with fresh-keeping film or cover. In dry weather, the surface moisture is easy to be lost;
Step 1 . Put the milk, water, egg liquid, white granulated sugar, milk powder, high gluten flour and yeast in the order of liquid first and then powder into the chef's barrel.
Step 2 . Turn on the power of the cook machine, select low speed gear 1 to stir the flour evenly, then select high speed gear 4 to knead the dough for about 10 minutes, knead the dough to the expansion stage, and add salt and salt free butter softened at room temperature.
Step 3 . Start the cook machine again, knead the dough at high speed for about 8 minutes, knead until the dough reaches the complete stage, and finish the kneading work.
Step 4 . Take out the kneaded dough, separate out a dough of about 200g, add Matcha powder and knead it into a green dough. It is recommended to add a few drops of water to melt the Matcha powder after sieving, and then mix it with the white dough and knead it evenly (I omit this step when making it, and the Matcha powder will be uneven when kneaded into the dough, and you will see granules). Use a clean large basin to cover it upside down and ferment at room temperature.
Step 5 . The remaining white dough is rounded and put in a clean basin, covered with fresh-keeping film, and fermented at room temperature.
Step 6 . After about 1.5 hours, the rear dough is fermented to 2-3 times the size, dip your fingers in a little dry flour and poke a hole in the middle. If the hole state does not change, it means that the fermentation is completed. The fermentation time is not fixed by the temperature, and it is generally determined according to the state of the dough.
Step 7 . Fermented Matcha dough.
Step 8 . After the fermentation, the green dough is divided into 3 parts and the white dough is divided into 6 parts, which are rounded and relaxed for about 15 minutes respectively;
Step 9 . After the dough is relaxed, take one of the small dough and roll it into an oval shape with a rolling pin. Press one end thin with your fingers to facilitate natural bonding when closing.
Step 10 . Roll it into a strip from top to bottom, with the closing down.
Step 11 . Slowly rub the dough into strips with your palm, about 50cm long. Continue to rub 2 pieces in the same way.
Step 12 . Take 3 pieces of twisted noodles and put them together, pinch the top tightly, and cross weave them together according to the braiding method.
Step 13 . After knitting, connect the ends of the braid and pinch the joint tightly.
Step 14 . After all the garland bread blanks are made, they are fermented at room temperature for about 1 hour.
Step 15 . Wait for the garland bread blank to ferment to 1.5 times the size and finish the fermentation.
Step 16 . Gently brush a layer of egg liquid on the surface with a brush, and then randomly place dried cranberries and cooked melon seeds.
Step 17 . Three bread cubes are decorated in the same way.
Step 18 . Turn on the power of the oven and select the air baking mode. The temperature is 180 degrees and the time is 18 minutes.
Step 19 . Place the baking pan with garland bread on the top of the oven and bake for 18 minutes.
Step 20 . Sift a little powdered sugar on the surface of the bread after it comes out of the oven.
