If you put too much rock sugar, the bottom of the pot will be sticky. If you put too much sesame oil, there will be extra oil out of the pot, so it is appropriate! Step 1 . After the chicken wings are thawed in cold water, use the knife to cut 2 knives before and after each, in order to bleed the water.
Step 2 . Cut 2 slices of ginger, put 5ml cooking wine, put it into the pot in cold water, and blanch. After the water boils, boil it for a while, and let the blood come out completely.
Step 3 . After blanching, take out the cold water to remove the blood foam, and set aside. Prepare onions, ginger, garlic and rock sugar.
Step 4 . Rice wine: sesame oil: soy sauce =2:1:1. Remember the proportion, and increase or decrease it according to the amount of dishes. I didn't use rice wine. It was hard to buy in the north, so I used Baijiu locally, about half a bowl.
Step 5 . Pour the previous sesame oil into the pot, add green onions, ginger and garlic, and fry until fragrant.
Step 6 . Pour into chicken wings and stir fry over high heat until the surface is golden. All I did was yellowing slightly. Maybe I poured too much sesame oil.
Step 7 . Pour in Baijiu, rock sugar and raw soy sauce in turn, cover the pot and cook over low heat for 15 minutes. Stir fry with a shovel from time to time to prevent the pot from sticking.
Step 8 . Open the lid and collect the juice.
