Sichuan people call it Xian Shao Bai, and there is also a sugar beet called Tian Shao Bai. Shao Bai is a must-have dish for Sichuan people during the Spring Festival or the Nine Bowl Festival. When it comes to Shao Bai, it means both sweet and salty. Many places call it braised pork, such as plum and vegetable braised pork, although similar, the taste and preparation are different.This dish is quite troublesome and takes a long time. Please make sure to steam it for enough time, otherwise it won't taste good.
Step 1 . Choose a suitable piece of pork belly, preferably three or more strands of meat, with alternating fat and lean, seven fat and three lean.
Step 2 . Boil in the pot for 20 minutes.
Step 3 . Take out the coolness.
Step 4 . Use a toothpick to poke small holes randomly on the skin of the meat for easy flavor absorption.
Step 5 . Apply red soy sauce on the skin of the meat.

Step 11 . Stir fry sprouts in a dry pan, add ginger rice and stir fry together, stir fry dried sprouts for later use.
Step 12 . Cut the pork belly to a thickness of 0.4 centimeters and a width of 10 centimeters.
Step 13 . Add seasoning red soy sauce, white sugar, pepper powder, five spice powder, and cooking wine and stir well.
Step 14 . Arrange the skin of the meat neatly in a bowl facing downwards, sprinkle with sprouts, enlarge the scallions on the surface, and soak with sea pepper.
Step 15 . Steam in the steamer for 90 minutes, then transfer to a plate when cooked. Done. Fat but not greasy, melts in the mouth.
