Step 1 . Slice grass carp (ask the chef to prepare the slices when buying fish). Wash the fish fillets and bones and dish them separately. Add Baijiu, soy sauce (a little), white sugar, salt, an egg white, and some starch into the fish fillet, mix well and marinate for 20 minutes. Marinate fish bones with soy sauce, salt and Baijiu for 10 minutes
Step 2 . Put pickled Chinese cabbage and water spinach on the bottom of the basin for standby
Step 3 . Pour an appropriate amount of oil into the pot, slice ginger, cut chili peppers into sections, heat up the oil and remove from the pot. Add bean paste. After slightly frying, add the marinated fish bones and stir fry. Add an appropriate amount of water and bring to a boil.
Step 4 . Remove the cooked fish bones and place them on the water spinach
Step 5 . Bring the soup in the pot to a boil, add fish slices, and gently disperse with chopsticks. When cooked, pour into a bowl of water spinach and fish bones.
Step 6 . Chop garlic cloves, chopped scallions, crushed pepper, and add chili powder to the fish fillet. Heat the oil in the pot, pour it on, and it's done
