Orange peel brown sugar ginger jujube sugar
This is a kind of hard candy with brown sugar, ginger and jujube. It is very chewy. It is added with candied orange peel, which can regulate the breath and has a particularly fresh taste. When it is distributed to friends, they all praise it as super good, and they are all powdered. I use the tender ginger of small yellow ginger, so the pungent taste is soft. Everyone likes it. Even older children love it. If you use ginger, it is recommended to reduce the amount of ginger by 20-30 grams.Sugar must be cut quickly while it is warm. It will be hard when it is cold. It is very difficult to cut!
Step 1 . No water, no oil, and no stick. Stir fry the glutinous rice flour in a medium low heat for standby. Generally, when the rice flour is fried to the point of steaming, it tastes tasteless and turns slightly yellow.
Step 2 . Weigh the required ingredients and prepare them.
Step 3 . Peel off the small yellow ginger and cut it into thin slices. Add 150g of water and use the fruit and vegetable stalls of the wall breaking machine to make mud. Then add the jujube meat and continue to make mud with the fruit and vegetable stalls. The finer the fight, the better!
Step 4 . Pour the beaten ginger and jujube paste into a non stick pan.
Step 5 . Add the handmade brown sugar.
Step 6 . Add maltose. If the maltose is hard, steam it for a few minutes, and then pour it when it becomes soft.
Step 7 . Add corn germ oil, boil brown sugar and maltose over medium heat, and stir carefully.
Step 8 . After boiling brown sugar, turn it to medium low heat and start boiling. During the process, pay attention to stirring and paste the bottom carefully. Boil until you lift the shovel, and turn off the fire when the paste can hang a flag on the shovel.
Step 9 . Add 35g of water to corn starch to make water starch. Slowly add small amount of water starch to the paste. Pour it and stir it quickly until it is completely fused. No white color can be seen.
Step 10 . Fire again, continue to boil the cream until it can hang a flag on the shovel.
Step 11 . Pour a lump of paste into a bowl filled with clean water to cool it, knead it by hand, and it will not melt. If the paste becomes tough, it means it is ready to boil. If it melts when touched in the water, it indicates that it is still too thin and should continue to boil.
Step 12 . In the box, spread baking paper to prevent sticking, and sprinkle candied orange peel evenly. This is about half a box.
Step 13 . Turn off the heat when the paste is boiled over a medium low heat until it can hold together as shown in the figure and no longer flow, just like the bean paste filling we bought.
Step 14 . Pour the paste into the box.
Step 15 . After finishing with a shovel, sprinkle tangerine peel evenly.
Step 16 . Cover the surface with a piece of baking paper and press it with pressure plate.
Step 17 . After pressing, tear off the baking paper covered on the surface. When the paste becomes warm and the hand doesn't stick much, you can start cutting.
Step 18 . Apply cooked glutinous rice flour on the kitchen knife, cut it, and then add flour to the knife again after cutting, which can prevent sticking.
Step 19 . Cut out the shape you want, and then wrap it with sticky rice paper. The cut on my drawing is too big to hold my mouth. As a result, I cut it into two again and took no pictures. It's about the size of the first section of a woman's thumb.
Step 20 . Because I want to send it to my daughter who is studying outside, I use sticky rice paper+candy paper. If you eat it at home, roll it directly in the cooked glutinous rice flour, sieve the excess flour with a colander, and then put it in a jar and seal it.
