Step 1 . Fresh mugwort, wash and control 250 to 270 grams of water, blanch in boiling water and wring out about 150 to 160 grams for later use.

Step 2 . Place 250g glutinous rice in the main pot: Grind at a speed of 10 for 3 minutes (make sure to cover the measuring cup lid), stop in the middle, use a scraper to scrape off the powder on the pot wall, and continue to polish finely. Put it into a bowl and set aside.

Step 3 . Add the filling according to your preference. My filling is winter bamboo shoots (cut into small pieces and add Xiaomei, speed 5 seconds), dried five spice tofu (cut into large pieces, speed 5 seconds), cut into granules and pour out separately. (If you like large particles, please cut the tofu with a knife.) Pork belly (three pieces of 5 wash, cut into small pieces and freeze in the refrigerator for 2 hours or take out the frozen meat for 10 minutes to cut with a knife, cut into 6 particles at a speed of 10 seconds). Add oil and stir fry the meat for 3 minutes until fragrant, then add winter bamboo shoots, tofu, pickles, and seasonings for 6 minutes with a V-grade spoon. You can also make sweet green balls by wrapping bean paste. (My filling is shown in the picture. If you like large particle tofu jerky, please cut it with a knife.)

Step 4 . Put 80 grams of water in Xiaomei for 5 minutes and bring to a boil with a 90 degree spoon (you can add boiling water directly). Pour in 50 grams of starch and mix at a speed of 4 times for 30 seconds. Scrape the bottom of the pot with a scraper to prevent it from sticking to the bottom

Step 5 . Add 250 grams of glutinous rice flour, 150 to 160 grams of wormwood after wringing, and mix at a speed of 10 in 30 seconds

Step 7 . Rub the dough for two minutes until it forms a ball, and touch it with your hands to avoid getting too wet. Apply oil to your hands, then take out the dough and knead it into a round shape

Step 8 . Knead it into a round shape, then knead it into a long strip, and cut it into 30 to 40 gram pieces, totaling about 15 pieces Cover with plastic wrap to prevent it from drying out

Step 9 . Roll it into a circle, wrap it with filling, close the mouth and wrap it, then knead it again (use your fingers to apply some oil without touching your hands). You don't need a rolling pin, just pinch a circle with your hands, fill it with filling (the filling should be dry, without soup), close the mouth and wrap it (the wrapping should be thicker, too thin can easily leak the filling). The circle should be higher (it will flatten when cooked)

Step 11 . Fill the blade with hot water for 18 minutes at V-speed 1. After the steam rises, put it in the steamer and steam for 13 minutes at V-speed 1
